It’s a bittersweet occasion today. Our good friends are moving away and I can honestly say that I am going to miss them dearly. In celebration to their greener pastures, all of our friends and family are throwing them a spectacular (child friendly) going away party in their honour! Since I know their kids are a huge fan of Peanut butter and Jelly sandwiches, I have made Peanut Butter and Jelly Cupcakes!
I had this ugly bunch of bananas that were nearing the end of its life span and needed to be used up quickly. I should probably mention that I am weird; I am a weirdo. I prefer under ripe bananas. Feel free to call me crazy, but as soon as the first brown dot develops, I prefer not to ingest them in their current form.
Last year, my dear husband texted me, “Sweetie, can you bake me 4 dozen cupcakes for my D.A.R.E. class for tomorrow? Please and thank you!”. In a frenzy, I ran out to the grocery store and randomly picked up 4 boxes of cake mix and ingredients for icing.
The astute reader will say, “Hey, Kat! That makes 8 dozen cupcakes! That’s too many boxes!”

I have a best friend and she is beautiful, sweet, sophisticated, sassy and little nutty. Everyone has that best friend. They are absolutely wonderful and you seriously can’t get enough of their company. The only problem is that I live 850 kilometers away from my bestie and I really don’t get to see her as often as I would like.
These brownies remind me of her.
